Lemon Chicken with Black Quinoa Salad


  • Lemon Chicken
  • 2 boneless, skin-on chicken breasts
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, very finely minced
  • 1 lemon, zested
  • 1 tablespoon lemon juice
  • ¼ cup white wine
  • salt and freshly ground black pepper
  • Black Quinoa Salad
  • ½ cup black quinoa
  • 1 cup water
  • ¼ teaspoon salt
  • 1 small shallot, very finely minced
  • 1 bunch flat-leaf parsley leaves, very finely minced
  • 1 bunch fresh mint, leaves only very finely minced
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • salt and freshlly ground black pepper


  1. Place chicken breasts in a bowl; add olive oil, garlic, lemon zest, lemon juice, and season with salt and fresh ground black pepper; set aside.
  2. Bring to a boil; 1 cup water with salt in a saucepan. Add quinoa, cover, and simmer until all the water has evaporated and quinoa is cooked, about 15 minutes. Leave covered for 10 more minutes, fluff with a fork and transfer to a plate to cool.
  3. Heat up a Dutch oven or pot over medium-low heat with a drizzle of olive oil. Add chicken breasts, skin side down, with marinade juices. Cook, about 4 to 5 minutes on each side, until fully browned. Deglaze with white wine, cover and simmer for 10 minutes.
  4. Stir together cooked quinoa with shallot, parsley, mint, olive oil, and lemon juice.
  5. Rest chicken breasts for 5 minutes. Slice chicken breasts on the bias in the opposite direction of the meat fibers. Divide into 2 plates and serve with the black quinoa salad.
Mealthy tip:

Feel free to use skinless chicken breasts if you prefer. Similarly, use white or red quinoa in place of black quinoa.

I really loved this salad! The lemon chicken was phenomenal. Lemon, garlic, and white wine is always a winning combination. The black quinoa was also a nice complement to this dish. I've only ever tried white and red quinoa, so this was a nice change.

My favorite part of this dish was the lemon chicken. Great flavor and tender meat. This recipe probably tastes great with any type of quinoa or even farro, if you are unable to find black quinoa. Delicious dish, impressive.
