  • Peanut Butter
  • ½ cup smooth natural peanut butter
  • ½ cup coconut butter
  • 1 tablespoon coconut oil
  • 2 tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • Jelly
  • 1 cup raspberries
  • ¼ cup coconut butter
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil


  1. Line 6 muffin cups with parchment paper.
  2. Add the peanut butter, coconut butter, and coconut oil to a microwave-safe bowl. Microwave until everything mixes together easily, about 1 minute. Stir in the maple syrup and vanilla extract.
  3. Add 1 tablespoon of the peanut butter mixture to each muffin cup and place in the freezer until firm, about 10 minutes to solidify.
  4. Add the raspberries, coconut butter, and coconut oil to a separate microwavable bowl. Microwave until they mix together easily, about 1 minute. Stir in the maple syrup.
  5. Divide the raspberry mixture evenly into the cups over the peanut butter. Divide the remaining peanut butter on top of the raspberry mixture in each muffin cup.
  6. Place in the freezer for at least 4 hours to overnight. Allow the cups to sit at room temperature for 10 minutes to soften before serving.
Mealthy tip:

Don't have coconut butter? Make your own by adding shredded, unsweetened coconut to a food processor and process until a puree forms, 1 to 2 minutes. Top these tasty parfaits with additional raspberries and coconut flakes before freezing for added flavor.

This are really yummy. They stayed really moist even which baked. I did this with blueberries instead of raspberries, really good!
