I usually roasted butternut squash in the oven, but using an air fryer is much simpler. I made this the other day to eat with leftover rotisserie chicken that was in my fridge and I didn't even have to use the stove! Olive oil, thyme, salt, and pepper is all you need!

Love this recipe, seems much faster than cooking in an oven! I take the squash and used it to make veggie buddha bowls for the week. I added a little cumin spice to mine. Really yummy.
