Mealthy Tip

Substitute chicken thighs for the chicken breasts if desired. Substitute butter for the olive oil for a richer flavor. Try shallots instead of the onion for a slightly different flavor.

My husband’s new favorite meal. Cook some rice while the multi pot is doing its thing and then add the cooked rice to the tasty broth in the bottom. Wow! So flavorful!

Fantastic recipe - I have made it twice now and both times it came out perfect! Thanks to Bernardo, I added turmeric the second time, and it made it that much better!

This recipe was tasty but everyone didn't think it was like Lemon Chicken. The flavors were all pretty clear but it just wasn't like what we were expecting. Now, that is not a bad thing! The chicken was cooked very well- it was juicy and flavorful. I paired it with brown rice and green beans. We will make this again.

This was such an easy and flavorful meal to make in my Instant Pot. The chicken was so tender and with my fresh lemons it was the perfect pairing. Served with roasted potatoes and steamed broccoli with lemon juice. Paleo and Keto friendly!

Ali Fard says:

The cook time for the chicken was right on, but you need to double the seasoning measurements for more flavor as what’s indicated wasn’t enough for 4 chicken breasts.

I added a tablespoon of butter before adding the chicken stock. Butter does indeed make everything better!

I made two servings and was nervous there wouldn’t be enough liquid for my Instant Pot to cook it. It did cook and the meat came out very tender. However, the flavor is really lacking... I used all fresh ingredients and followed the recipe to a T, but it was still very bland to me.

This meal was a huge hit. My family loved it definitely will make it again. I added baby carrots and bite size red potatoes to the steamer basket, placed in the pressure cooker and cooked them along with the chicken.

Made exactly as directed. The chicken was so tough and rubbery. It was literally inedible. The first time in my 23 years of marriage I made a dinner so terrible I had to run out and get hamburgers. It went in the trash.

Rachel Schaulis says:

My family loved this, we also added turmeric and 1/4 cup of white wine. Loved loved loved, this will be an every week dish.

After cooking for 10 minutes, my boneless skinless chicken breasts only had an internal temp of 140. I put them back in for an extra 6 minutes to get the temp to 165. Has anyone else experienced this?

This recipe is fantastic and fast! I served it with angel hair pasta and added capers when serving—they really added the final touch. Definitely a regular in the supper rotation.

Jenny L says:

Great recipe, used ingredients for 4 servings but only for 2 chicken breast and cooked at 5 min because 9 is waaaay too long for chicken breasts.

Image of Dylan Di Girolamo

Dylan Di Girolamo says:

Yum, I even used the sauce at the bottom to dip bread in! This turned out great, did not taste the lemon too much, so might add more next time.

Image of Chelsea Chanitz

Chelsea Chanitz says:

This was tasty, but the Italian seasoning was overpowering, and I even cut it in half. However, I’m also not a huge fan of thyme in general, and I think that’s what I was tasting over the other seasoning. I also added about 1/4 cup white wine. Will definitely make again, with some minor seasoning adjustments for personal taste. Overall, a good recipe.

Daniel Albert says:

I used an extra clover of garlic and eyeballed the seasoning. Personally I could’ve done with less lemon. It was absolutely amazing and I served with roasted Brussels sprouts.

Made this tonight and it turned out fabulous. I also added turmeric, juice of a whole lemon and a small spoonful of better than bouillon.

I used chicken thighs that were attached to the legs. We enjoyed, but needed more seasoning. Read ideas in previous comments. Will do next time. I also will pour juices in a pot and thicken with cornstarch paste.

Image of Debra Moses

Debra Moses says:

Was yummy but not as lemon flavored as I was expecting. Also not a big fan of Italian season so next time I make it I’m not going to put as much and I think I will enjoy it more. But for the most part I like it and will make it again.

We paired the chicken with roasted potatoes and asparagus! Would definitely make again!
