Air Fryer Salmon and Cauliflower Rice Bowls


  • 1 tablespoon olive oil
  • 2 cups cauliflower rice
  • 1/2 teaspoon garlic powder
  • salt and pepper
  • 2 Air Fryer Salmon fillets
  • 1 cup baby arugula
  • 1 lemon, halved


  1. Warm oil in a medium skillet over medium-high heat. Add cauliflower rice, garlic powder, and salt and pepper to taste and cook for 5 to 7 minutes, stirring frequently, until cauliflower is tender.
  2. Divide cauliflower rice, salmon filets, arugula, and lemon halves between two bowls and serve immediately.
Mealthy tip:

You can purchase riced cauliflower at most stores now, but if you can't find it, simply pulse 3 cups of cauliflower florets in the food processor until the cauliflower is the size of rice grains.

Spice things up! Use your favorite spices in the cauliflower rice or atop your salmon.

I love cauliflower rice bowls but had never made a salmon one bc I'm intimidated by cooking it. This is the easiest salmon technique using the air fryer. Literally just throw it in there, season, press go. I used a big spatula to get it out of the air fryer once it was finished.
