Air Fryer Salmon and Cauliflower Rice Bowls
- 1 tablespoon olive oil
- 2 cups cauliflower rice
- 1/2 teaspoon garlic powder
- salt and pepper
- 2 Air Fryer Salmon fillets
- 1 cup baby arugula
- 1 lemon, halved
- Warm oil in a medium skillet over medium-high heat. Add cauliflower rice, garlic powder, and salt and pepper to taste and cook for 5 to 7 minutes, stirring frequently, until cauliflower is tender.
- Divide cauliflower rice, salmon filets, arugula, and lemon halves between two bowls and serve immediately.
You can purchase riced cauliflower at most stores now, but if you can't find it, simply pulse 3 cups of cauliflower florets in the food processor until the cauliflower is the size of rice grains.
