Make sure the Buffalo sauce you use doesn't have sugar in it if you are following a strict keto diet.

Konjac root (glucomannan) powder is a keto-friendly thickener. Skip it if you prefer a thinner soup. You can find it on Amazon or in some Asian markets.

For a chunkier consistency, strain out some or all of the vegetables along with the chicken, and return to pot once soup has been blended.
