Mealthy Tip

Vegetables can be sautéed ahead of time.

To make ahead, pressure cook the frittata and then reheat using the CrispLid.

If your pan is a push pan type, place it on an empty drinking glass and gently push down on the top edges of the pan. This will help the frittata to release from the pan sides.

I really enjoyed this recipe. The seasonings made it a little different than the usual frittata. I made no changes except for throwing in some real bacon bits. It also reheats well. Another time, I'd use the ceramic non-stick pot for sautéing the veggies and then switch to the regular pot for cooking and crisping. That way, the pot wouldn't have to be cleaned before doing the eggs. The veggies did tend to stick to the regular pot.
