Excellent recipe. I used ham and some bacon rather than ham hocks...Also used ground thyme instead of fresh...worked just fine.

I used smoked ham shanks instead of ham hocks and it turned out great! I also added more seasonings(onion powder, white pepper, cayenne pepper, and smoked paprika) and used bacon fat to sauté the onion. Mine turned out slightly overdone, so next time I’ll only let it naturally release for 12-13 minutes.. All in all, it was awesome and I’ll definitely make it again!
