Radish and Toasted Mustard Seed Raita
- 1 cup Greek-style yogurt
- 1 tablespoon brown or yellow mustard seeds
- 5 radishes, diced small
- 10 mint leaves, minced
- Heat a small skillet on medium-low. Toast mustard seeds in skillet, shaking the skillet constantly to prevent burning, until lightly browned, about 2 minutes; transfer to a small mixing bowl to cool.
- Stir yogurt, radish, mint, and toasted mustard seeds together in a bowl; season with salt and pepper.
Toasting the mustard seeds really brings out their flavor. Try this when adding seeds like cumin and fennel to other recipes. Brown mustard seeds tend to be more hot and aromatic while yellow mustard seeds have a sweeter flavor.
