Pineapple Kale Smoothie
- 1/4 large pineapple, chopped (or 1 cup frozen cubes)
- 2 kale leaves, de-ribbed
- 1/2 cup coconut water
- 1/4 avocado
- 1 cup ice cubes
- 1 tablespoon honey
- Blend all ingredients until smooth, 30 to 45 seconds. Pour into a glass and enjoy immediately.
Avocado adds healthy fats and creaminess to smoothies. You can also substitute half of a banana to get the same creamy texture and more potassium. Alternatively, add a quarter cup of plain yogurt or coconut yogurt for more protein and a probiotic boost.
